Stuffed Green Peppers

Stuffed Green Peppers happen to be one of my favorite quick ready-made meals from Costco that  can easily be made at home in a little time!  Filled with ground beef and rice, covered with a layer of melted  mozzarella cheese, these stuffed green peppers make the perfect weeknight dinner especially on this incredibly windy, cold night!

We have been in a winter freeze here in Maryland with the temperature tomorrow forecast to be -5 degrees.  I am so not looking forward to that!  Brrrrrr…..

But that’s ok, being cold outside gives me the opportunity to spend more time in the kitchen experimenting and trying out new recipes.

These Stuffed Green Peppers are hearty with just the right amount of tomato sauce that is mixed in with the beef/rice mixture and a little more poured over the tops.

Of course you can add a little color by using red or yellow bell peppers, I just happened to pick up all green.  Also, you could  use ground turkey instead of the ground beef, which is an option I often do, just for something different.   So easy to make it your own-whatever you prefer is fine.

Wash/rinse your peppers, slice off the stems, and remove seeds and membranes.  Cook in boiling water,

Cook ground beef and onion.  Add rice, seasonings, and tomato sauce,

Fill your bell peppers and top with more tomato sauce,

Bake covered for 45 minutes, remove, add cheese, and bake 15 minutes longer.

Stuffed Green Peppers

Ingredients

  • 6 bell peppers, (green, red, or yellow)
  • 1 cup cooked rice
  • 1 pound ground beef
  • 1 teaspoon salt
  • 1 clove of minced garlic
  • 1 can of tomato sauce (15 oz)
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Preheat oven to 350. Wash/rinse peppers. Cut stem tops off of peppers, remove seeds, and membranes. Rinse inside. Add peppers to pan, and add enough water to cover. Bring water to boil, and cook for 5 minutes. Drain, set aside.
  2. Meanwhile, cook ground beef and onion in skillet until beef is browned. Drain
  3. Add rice, salt, minced garlic and 1 cup tomato sauce; cook until hot.
  4. Place peppers upright in a ungreased 8x8x2 inch baking dish. Stuff peppers with beef/rice mixture, pour rest of tomato sauce evenly over peppers. Sprinkle with shredded mozzarella cheese.
  5. Cover with foil, and bake 45 minutes.
  6. Remove foil and bake 15 minutes longer.
