Spinach Salad

This great spinach salad will be a great addition to your summer get-together.

This spinach salad has been a regular in our house for a very long time.  I love the addition of spinach in many salads.   Plus spinach is loaded with a lot of good stuff like niacin, zinc, iron, and fiber. Back in the day, baby spinach was not as prevalent as it now is, so I mainly used the curly leaf spinach.  Baby spinach has tender leaves, a bit sweeter, while curly leaf spinach has a slight bitterness. Either way, you will fall in love with this salad. 

Tossed with bacon, hard boiled eggs, and the sweet and tangy mustard dressing this spinach  salad will complement any meal.  The kids will love it, especially after you tell them that it is highly recommended by Popeye!

Spinach Salad

This great spinach salad will be a great addition to your summer get-together.

Ingredients

  • 1/3 cup vegetable oil
  • 1/3 cup apple cider vinegar
  • 2/3 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 heaping teaspoons yellow prepared mustard
  • 1 medium onion
  • 1 bag of fresh spinach
  • 6 slices of cooked bacon, crumbled
  • 4 hard boiled eggs

Instructions

  1. Place oil, apple cider vinegar, sugar, salt, black pepper, and mustard in blender. Blend until smooth. Set aside.
  2. Cook slices of bacon , crumble.
  3. Place spinach, bacon, and sliced hard boiled eggs in a large salad bowl, toss. Cover with plastic wrap and refrigerate until ready to serve.
  4. When ready to serve, Remove salad from refrigerator. add dressing and toss, Top with thinly sliced onions.
