Shrimp Fried Rice

Shrimp Fried Rice has always been a favorite for me.

I have discovered that preparing Shrimp Fried Rice at home is not as difficult as I had once thought it would be.  Having all of your ingredients ready to go seems to be the secret to having success stir frying this Shrimp Fried Rice.  Actually that is a good strategy to use when preparing food anyway, but particularly with this dish as it cooks up pretty quickly.  It just makes things go a little smoother.

Another tip that seems to make this work is to cook your rice the day before and put in refrigerator until ready to use.  That way using cold rice prevents it from becoming mushy.  

Shrimp Fried Rice

A great Chinese dish you can make at home.

  • 3 tablespoons canola oil
  • 1 pound medium raw shrimp, peeled and deveined
  • 3 eggs
  • 1 tablespoon water
  • 1/4 cup chopped green onions
  • 2 teaspoons minced garlic
  • 3 tablespoons soy sauce, low sodium
  • 4 cups cooked cold rice
  • 2 cups frozen mixed vegetables with peas, corn and carrots, thawed
  • 1 teaspoon sesame oil


  1. TIP: Have all ingredients, measured and prepared before starting to cook.
  2. Heat 2 tablespoons of canola oil over high heat in wok. Add raw shrimp, and cook until opaque. Remove from wok and set aside.
  3. Beat eggs with the water. Add to wok, and let sit until set. Remove from wok, and chop.
  4. Add remaining tablespoon of oil to wok. Add the green onions, cook for 1 to 2 minutes, and then add the minced garlic. for an additional 30 seconds.
  5. Add in the cold cooked rice, and stir fry for 1 to 2 minutes, until heated. Add the cooked shrimp, chopped eggs, thawed vegetables and soy sauce, continuing to stir fry. Once heated through, drizzle the sesame oil.
