Quiche 1


This quiche is easy to put together resulting in a nice light and savory breakfast treat.  I have to admit that breakfast during the week is usually either a yogurt, a muffin or other pastry, cereal, fruit, or breakfast bar.  Not totally bad choices, however, on the weekends I like to put a little more effort into making breakfast.

Also, if you add a salad, and fruit, this would be great for brunch/lunch meal.   In fact, I am sure that this light, fluffy custard baked in a flaky pie crust could be breakfast, lunch, or dinner.  I will let you make the choice.

  • 1 refrigerated pie crust
  • 1/2 pound Swiss cheese, grated
  • 4 eggs
  • 1 cup heavy whipping cream
  • 1/2 cup milk
  • 3/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon black pepper
  • 8 slices crisp bacon, crumbled


  1. Preheat oven to 425 F.
  2. Line a 9 inch quiche/tart pan with the pie crust, pressing it into the flutes, trim excess pastry from the edge.
  3. Sprinkle 1/2 of the grated cheese over the bottom of the pan. Top with bacon, and then the remaining grated cheese.
  4. Beat eggs, blend in heavy cream, milk, salt, nutmeg, black pepper; pour over cheese in pan.
  5. Bake in oven 15 minutes at 425 F, then reduce temperature to 300 F for 30 minutes or until pastry is golden brown and custard is set.

  1. I also add a little chopped spinach and green onions to mine for some added color and flavor. Make two and freeze one for another day. Just reheat later! Good recipe.
