These Pumpkin Spice Cupcakes are filled with just the right stuff!
So I know it’s summertime, but in going through the pantry I spotted a can of pumpkin puree, and all I could think about was a Starbucks Pumpkin Latte.
Yes, just when it’s 90 degrees and the beach is calling, I am craving pumpkin spice. I guess it’s like the “no white pants before Easter, or after Labor Day” rule, Who makes these rules anyway?
Well regardless, when I saw this recipe at Annie’s Eats, I knew my craving would be fulfilled. The cupcakes are very moist, with a hint of cinnamon, cloves, and nutmeg. Not too strong, just enough. Brushing on the coffee puts you in Starbucks!
Go for it, You will be glad you did. Better yet, bake up a batch to take to the beach with you. FYI, Starbucks normally brings their Pumpkin Spice lineup in early September. (I’m just saying)
