Pina Colada

One of my all time favorite cocktails is a Pina Colada.

Way back when, before we were even married, my now husband and I would go to a little “off the beaten path” cozy restaurant.  They made the absolute best Pina Coladas.   We soon became regulars and found out why their Pina Coladas were so creamy and so much better than anywhere else.  Well, the secret is ice cream!  That is how I have made my Pina Coladas since then.  Usually I use vanilla ice cream, but sometimes I go all out and use everything coconut!  Coconut ice cream, coconut rum, it is soooooooo good.

Pina Colada

A full of coconut, creamy, delicious drink!

  • Prep Time: 10m

Ingredients

  • 1/2 15 oz can Coco Lopez Cream of Coconut
  • 1 cup ice cream, vanilla or coconut, can use more or less
  • 3/4 cup pineapple chunks, fresh or canned
  • 2 cups crushed ice
  • 3/4 cup white rum or coconut rum

Instructions

  1. Open can of Coco Lopez, cream of coconut, and stir until smooth and blended. Pour 1/2 can into blender. Add remaining ingredients Blend until smooth and creamy. (recipe is for 1 batch, double other ingredients for 2 batches)
