Back in the day, school lunches were prepared at the school, unlike today, pre packaged and bought to the schools to be microwaved.

My Mom was a cook at the school.  I remember the smells coming out of that cafeteria.  It smelled like home.  On Fridays, peanut butter cookies were on the menu, and they were always a hit.   And funny, we never heard of anyone not being able to eat peanut butter.  Other favorites were the macaroni and cheese, meatloaf, baked chicken, pizza and the apple crisp.  All were sooooooo good.   Missing the good ole days!

These soft peanut butter rich cookies bring back the best memories.

  • 1/2 cup butter, room temperature
  • 1/2 cup solid shortening,(Crisco)
  • 1 cup dark brown sugar, packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup peanut butter, creamy or crunchy
  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • about 1/4 cup milk


  1. Preheat oven to 350. Place a sheet of parchment on 11 x 14 baking sheet
  2. Using the large bowl of electric stand mixer, combine the butter, shortening, and sugars, stirring at medium speed until light and fluffy.
  3. Add eggs, one at a time, mixing well after each.
  4. Add the peanut butter, mixing until blended,
  5. Sift the flour, baking powder, baking soda, and salt. Add to the bowl in thirds. Beat on low until blended.
  6. Roll the dough into 1 1/2 inch balls and place on baking sheet, 2 inches apart. Dip fork in milk, and criss cross cookies to flatten.
  7. Bake in oven approximately 11 minutes. (Avoid over baking. Cookies should be chewy, not dry when cooled. ) Place on rack to cool. Store cookies in tight lid container, or sealed plastic bag.
