These Mini Banana Cheesecakes are so creamy, smooth, and bursting with that naturally sweet flavor of bananas.  This little gem is reminiscent of a bowl of old fashion banana pudding all bundled up in this mini form.

This Mini Cheesecake Pan is one of my favorite pans.  You can be so creative in making the most adorable little dainty desserts.  Just the perfect size. Nothing to feel guilty about here.  (but seriously how realistic is it that you will only eat one of these little cuties, right?)  Imagine what a beautiful presentation you can create making a platter using a variety of mini cheesecakes.

For these Mini Banana Cheesecakes, start with  the crust of sweet, buttery, crushed vanilla wafers, followed by a layer of smooth sweetened banana enhanced cream cheese, firm banana slices, another banana/cream cheese layer and lastly top with a dollop of this stabilized whipped cream which is thick and perfect for this cheesecake.   Garnish with grated chocolate and these Mini Banana Cheesecakes make one delicious, and beautiful show stopping dessert.

Mini Banana Cheesecakes

Mini Cheesecakes

  • 1/4 cup melted butter
  • 1 cup crushed vanilla wafers
  • 2 tablespoons granulated sugar
  • 1 1/2 cups cream cheese, softened
  • 1/2 cup granulated sugar
  • 3 tablespoons flour
  • 1/2 cup bananas, puree
  • 1/4 cup sour cream
  • 2 eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 firm bananas, sliced
  • chocolate shavings, mini vanilla wafers (optional)


  1. Preheat oven to 325 degrees. Lightly spray mini cheesecake pan with cooking spray. Set aside
  2. Place vanilla wafers in plastic bag. Using a rolling pin, roll over vanilla wafers crushing to make about 1 cup
  3. In a small bowl, add crushed vanilla wafers with melted butter and sugar. Evenly distribute in the mini cheesecake pan, pressing in, and bake for 5 minutes. Remove from oven. Reduce oven to 300 degrees. Set aside
  4. In a large bowl, using a hand mixer, mix the softened cream cheese, sugar and flour until smooth. Add the mashed bananas and sour cream mixing in well.
  5. Beat in the eggs, and lastly stir in the pure vanilla, mixing until well combined. Do not overmix.
  6. Fill each cheesecake about halfway up with the banana/cream cheese mixture, Add a few of the firm bananas slices over each cheesecake. Top each cheesecake with the remaining banana/cream cheese mixture, filling to the top.
  7. Bake cheesecakes for 20 minutes, turn off oven, and let cheesecakes sit for 5 minutes in oven.
  8. Open oven door slightly and let cheesecakes sit another 20 minutes in the oven.
  9. Remove from oven. Let cool for about 30 minutes in pan. Place pan in refrigerator to chill.
  10. Remove from refrigerator. Top with stabilized whipped cream. Garnish with chocolate shavings and mini vanilla wafers.
