This rich, smooth, Flourless Chocolate Cake is a chocoholic’s dream come true!  From the first bite to the last it will definitely take care of the “I need chocolate now fix”.  You can admit it.  I know you have been there when nothing can be substituted for some chocolate!

Combining the bittersweet with the unsweetened cocoa creates the perfect balance for the cake.  When you need that afternoon pick me up, a slice of this cake will do the trick.  Plus this is so easy to put together.  

Plain is fine, but the addition of the vanilla ice cream and raspberries will dress if up and take it to a a whole new level.   It will be hard to not go for that second slice.

Flourless Chocolate Cake

Ingredients

  • 8 ounces bittersweet chocolate chips
  • 1 cup butter
  • 1 1/2 cups granulated sugar
  • 6 large eggs
  • 1 cup cocoa powder, unsweetened

Instructions

  1. Preheat oven to 350. Using a 10 inch springform pan, cut a round piece of parchment paper or waxed paper to cover the bottom of pan. Butter the bottom and sides of the pan. Set aside.
  2. Add the chocolate chips and butter in a metal bowl. Place bowl over a saucepan of hot, not boiling water. Stir until smooth and completed melted.
  3. Remove bowl from heat and add sugar.
  4. Add eggs one at a time, combining well with each addition.
  5. Sift in cocoa powder and stir until just combined.
  6. Pour batter into prepared pan.
  7. Bake 35-40 minutes Top of cake will have an thin crust.
  8. Remove cake from oven and place on rack to cool for 10 minutes.
  9. Remove side of pan, invert cake on a plate. Flip to rack to cool completely.
  10. Place cake on a serving plate, and sprinkle with a dusting of powdered sugar.
