My friend Patty has the same addiction so why not use her birthday as my excuse to bake up a batch of these! I stumbled upon this recipe at Five Heart Home, and could not resist. Check them out.
I just knew that they were going to be out of this world good, so I took the chance, not knowing how they would turn out. I was not definitely not disappointed! Pretty brave to do for a friend’s birthday, right?
Having coconut added into the batter really enhances that coconut flavoring. Luckily I had all of the ingredients on hand, so I whipped these babies up, added the cream cheese frosting, topped with more coconut, and got the seal of approval from my husband and daughter. (Family members are my professional taste testers) These coconut cupcakes turn out great!
I went through my baking supplies and found the perfect cupcake box. All set to go.
And by the way, Patty loved the cupcakes as well.
