I have always enjoyed spending time in the kitchen baking cookies.  As a young kid, “helping” your Mom bake cookies was a priceless experience.   Nothing like having the kitchen look like a hurricane came through with flour, sugar, and any other ingredient scattered everywhere.  And of course, Mom would just say things like, “that’s ok baby”, “thanks for your help”, and “you are doing a good job”……..   I guess it’s a Mom thing because I did the same thing with my kids when they “helped” me.

Anyhow, my two favorite cookies happen to be oatmeal and chocolate chip cookies, so putting these cookies together is really awesome.  Big Chewy Oatmeal Chocolate Chip Cookies are soft, packed with oatmeal and have just enough chocolate chips to take care of that chocolate fixation.

I love the oatmeal cookie base for these cookies packed with oats and that hint of cinnamon and nutmeg.  Both of the spices are evident in each bite!   Sometimes for a change, instead of using chocolate chips I have substituted using raisins, which results in really delicious cookies as well.   I would think that other substitutes such as dried cranberries, nuts, or maybe white chocolate chips would be amazing too.  Be creative right?  Fair warning though, they are addictive.

Ingredients

  • 1 2/3 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed dark brown sugar
  • 1 egg, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups quick cooking oats
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper.
  2. In a small bowl, combine all purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Whisk, set aside
  3. In large bowl of stand mixer on medium, cream together softened butter, granulated sugar and dark brown sugar. Stir in egg and vanilla.
  4. Gradually add in flour mixture. Mix well
  5. Lastly, by hand, add in oats and chocolate chips, evenly distributing.
  6. Using a medium cookie scoop, place cookies on prepared baking sheet. Bake for 12 minutes. Let cookies cool on baking sheet for a few minutes before placing on wire rack.
  7. Store cookies in an airtight container.
